Is the B&W straight out of the camera, or did you have to tweak the levels, etc. afterwards?

I was leaning heavily toward the 20D a few months ago, then backed off, but am still quite interested. I'm just trying to convince myself that the no-so-big jump from the 300D to the 20D is worth it.
